OUR STORY BEGINS WITH JOHN HARVEY

Jock’s ancestor John Harvey was a pioneering farmer who settled in Australia in 1839 from Wick in Scotland and was one of the first farmers to grow grapes north of Adelaide. Jock grew up on the family vineyard in Willunga and is a sixth generation of a family grape growing and winemaking heritage. He runs a successful viticultural business and has an extensive knowledge of the wine industry and in particular the McLaren Vale. His knowledge of the wine industry within the McLaren Vale region has been invaluable to the distillery.

At McLaren Vale Distillery, our whisky is shaped by both tradition and innovation. We use wet-fill cask maturation, filling barrels still carrying the essence of wine, allowing the spirit to soak up rich, layered flavours. The Mediterranean climate, with warm sun and cooling sea breezes, accelerates maturation, giving our whisky depth and character faster than cooler regions. Each wine cask leaves its own mark — Shiraz casks bring berry-spice notes, while fortified barrels add warmth and sweetness. From grape to grain, every stage of our distilling process is handled with care, combining heritage techniques with modern precision, while sustainable practices honour the land and preserve McLaren Vale for generations to come.

Our process begins in the vineyard and continues through every stage of distillation. From grape to grain, we tend the raw ingredients with care, combining traditional techniques with precision at fermentation, distillation, and maturation. Every step ensures that our spirits carry both the family’s heritage and the terroir of the region.

Sustainability guides everything we do. We recycle heat, reuse water where possible, and repurpose spent wine barrels, honouring the land that has nurtured six generations of our family. This approach allows us to craft world-class spirits while respecting the environment and preserving McLaren Vale for generations to come.

By blending this heritage with our own craft, we create products that celebrate McLaren Vale’s rich history and the enduring artistry of fortified wines.
