Step into the historic sandstone cellar of The Doss House in Sydney’s The Rocks for an intimate evening with McLaren Vale Distillery.
Hosted by Velvet Oakes, this guided tasting offers a rare opportunity to explore the craft of South Australian single malt whisky. With only twenty seats available, this is a thoughtfully curated experience for those who appreciate detail, depth, and the story behind every dram.
Guests will begin with our new make spirit—clear and bright, offering insight into the purest form of our distillate before oak and time shape it into whisky. From there, you’ll be guided through a selection of limited and distinctive expressions, each matured in barrels with a story of their own.
Tasting includes:

New Make Spirit – A rare chance to taste whisky in its unaged, elemental form. Made from 100% South Australian barley and double distilled onsite.

AWC Single Malt (42%) – Muscat-finished and approachable; ideal for cocktails or sipping neat, this is our house style in its most accessible expression.

Penny’s Hill (55%) – Rich and concentrated. Finished in the same fortified casks as the AWC but bottled at cask strength for added structure and intensity.

Maxwell Mead Cask – 8 Years – A single malt aged exclusively in an ex-bourbon barrel seasoned with spiced mead from Maxwell Wines. Smooth, layered, and uniquely local.

Dandelion Red Queen Cask – 8 Years – A single cask whisky matured entirely in a French oak barrel that once held Dandelion Vineyards’ iconic Red Queen Shiraz. Bold, expressive, and infused with the essence of Eden Valley Shiraz.

Very Old Tawny Pour – Conclude with a taste of our 78-year-old fortified, drawn from the family solera. Deep, complex, and a true taste of legacy.
This experience includes a shared cheese and charcuterie selection, a signature whisky cocktail, and access to exclusive bottle offers available only to guests on the night.
